Celebrated Chef Javier Blanc, born and raised in Madrid, Spain. Like many chefs around the world, chef Blanc’s culinary experience started in his teenage years as his mother’s assistant in the kitchen for the care of his family and siblings. The days in his mother’s kitchen inspired his creative and adventurous culinary up takes, which later shapes his culinary career as a chef and owner of Más Que Pintxos, a tapas restaurant available in five different locations inside of Madrid.

After decades as a restaurateur, Chef Blanc and his family left home in 2017 for Vancouver, B.C., with an ambitious heart and dream to honour his culinary talents by introducing the genuine paella experience to locals and Canadians.

Chef Blanc started Paella Guys in 2018 which today, continues to shine beyond just signature paellas but with an extensive range of tapas, immersing the rich tapestry of Spanish cuisine to his new home here in Canada.

In 2023, Chef Blanc was named “2nd Best Paella in the World” at Concurs Internacional de Paella Valenciana de Sueca, a world recognized international contest in small town Sueca of Valencia since 1961.
